Happy Thanksgiving  0

As a Thanksgiving treat I am going to share with you this year one of my family’s favorite recipes.

(Click on the title below to download the PDF)

Zimmerman’s Pumpkin Dessert

(the Gault Street School PTA- recipe)

6 eggs beat with electric beater until frothy

Add 1 large can of Libby’s pumpkin (1lb. )

Blend well with eggs until smooth

Add dry ingredients:

11/2 cups of sugar

1tsp. salt

1tsp. ground ginger

¼ ground cloves

2 tsp. cinnamon

1 tsp. allspice

Blend gently.

Add 1 large can evaporated milk.

Pour into 9×12 lightly greased pan.

To Duncan-Hines Yellow cake mix,

add 1 cube of melted butter or margarine.

Mix together.

Make into a very crumbly substance.

Spread over pumpkin mixture.

Top with 1 cup or more of chopped walnuts or pecans.

Bake at 350* for 11/4 hours. Check in one hour.

Serve with Cool Whip- whipped cream on top.

This recipe my mother discovered through my elementary school’s PTA.  Who the Zimmerman’s are or were I don’t know, but my family and friends have been enjoying this recipe every Thanksgiving since I was a kid.  I do not consider myself a cook, I rarely bake. I can boil and heat things in the microwave. That being said..this is one of the few things I bake.

The recipe is really basic, if you can follow instructions you can bake this.

I will give you a few tips:

Raw pecans are best…since they are raw they don’t burn as easily.

The recipe says check after 1 hr., in reality check after 45min.

A cube of butter is a stick.

The modern Dunkin-Hines classic yellow cake mix is what I use. It’s not as dry or crumbly as the older version. You’ll need to rub it between your fingers to get it to the right texture. Also I recommend tossing a few chunks into the pumpkin layer it’s a bit like buried treasure.

I hope you enjoy this rare recipe and have lovely holiday.

Thanks to All  0

Thank You.

to all who came to the Affair of the Arts and WindyCon41.

It was wonderful seeing all of you lovely people.

For all of you who voted for me  at WindyCon 41 as Best 2-D Pro,

I humbly thank you. I know I was up against some seriously talented Artists.

It seems I have inadvertently become a collector of the works of very talented individual

Mr. James Brown (award maker extraordinaire and all around nice guy)

, who makes the most imaginative thematic awards for the local SF conventions.

For WindyCon41  this year, he made these lovely hand bound books.

I feel honored to have been able to take one home, trust me the photograph doesn’t do it justice.

At the moment it’s blank inside…however will I fill it?:)
